Why they submitted this recipe:Our family has always loved to try new recipes and new foods. When the kids were little, I took Sophie and her brother to the farmer's market every week, and we would always come home with something we'd never tried before and learn how to make it. Exotic fruit, squash blossoms...we tried everything! And only stopped when we ran out of new things to try! We also loved to try new recipes, especially things we'd never had before. On one such day, we came across a recipe for "cheater cassoulet." It's a "cheater" because, as we learned, it is a simplistic copycat of the French recipe that is a true labor of love. But the recipe quickly became a family favorite, and we have modified it over time to the version here. The version I am sharing is prepared in the oven, but it also lends itself well to the crock pot, and even a campfire. We like to serve it with crusty bread and a fresh green salad.
Ingredients
- 8 pork sausage links (I prefer a combination of spicy, sweet, and/or mild. But use what you have or what you like best!)Ìý
- 1 large yellow onionÌý
- 3-4 sprigs of rosemaryÌý
- 2-4 cloves of garlicÌý
- 3 cups small grape or cherry tomatoesÌý
- 4 14oz cans great northern / cannelini beans (drained & rinsed)Ìý
- 2 14 oz cans pinto beans (drained and rinsed)Ìý
- 1 teaspoon (or more to taste) Better than Boullion chicken or vegetable flavor (optional)Ìý
- Salt and pepperÌý
- Olive oilÌýand balsamic vinegar for drizzling (optional)
Directions
- Preheat oven to 375 degrees.Ìý
- Cut onion into 1/2-inch wedges and place in baking dish with tomatoes, garlic, rosemary and sausage. Drizzle with olive oil and season liberally with salt and pepper.Ìý
- Place in oven and roast, stirring occasionally, until sausage is browned (you will need to turn sausages halfway though) and tomatoes are beginning to pop.Ìý
- When sausage is almost fully cooked, add beans, drizzle with olive oil, and return to oven until beans are warmed through. If using bouillon, add at the same time as beans.Ìý
- Remove from oven, adjust seasoning if necessary, and serve with a drizzle of balsamic vinegar (optional).
