Why they submitted this recipe:Feijoada is a favorite of my son's ever since he was able to start eating! It is a famous dish from Brazil typically eaten on Saturdays. My recipe is a fast version of this that can be made within minutes and can also stay on the stove and simmer away for the day. You should eat this with 1) rice, 2) a fresh chopped tomato, onion, and parsley salad, and 3) sauteed thinly sliced collard greens with garlic. If you want to go all the way also have fried bananas and sliced orange.

Ingredients

  • 1 large white onionÌý
  • half a pack of thick cut baconÌý
  • one pack of Italian sausages (can be hot if you prefer)Ìý
  • 6 cans of 15.5 low sodium black beansÌý
  • 4 cups of water or more as needed to thin out the feijoada

Directions

  • Gather all your ingredients. Roughly chop the half pack of bacon and add to a deep pot and let fry.Ìý
  • Half, then quarter the onion and add to the bacon once the bacon is almost crispy. Stir and loosen and caramelization on the bottom of the pan.Ìý
  • Slice the pack of sausage into 1/2 inches and add to the bacon and onion mixture. Keep mixing until fully cooked.Ìý
  • Once cooked through add the 6 cans of black beans and be sure to mix and get the bottom drippings mixed in as well.Ìý
  • Add water to the cans of emptied beans and add to the feijoada.Ìý
  • Stir and lower heat. Let simmer for at least 30 minutes or longer.Ìý
  • Serve over rice, side tomato, onion, and parsley salad and collard greens.
