Why they submitted this recipe: This recipe hits all the right spots when you want filling pasta but also the feeling of freshness from the lemon, spinach and feta cheese. It is fast to make and I usually increase the amount of spinach and orzo than what the recipe calls for.
Ingredients
- Water - 5 cupsÌý
- Uncooked Orzo pasta - 2 cupsÌý
- Spinach - 5 cups coarsely choppedÌý
- Feta cheese - 1 cup (4 ozs) crumbledÌý
- Extra virgin olive oil - 1 tablespoonÌý
- Lemon rind - 1 teaspoon gratedÌý
- Lemon juice (fresh) - 1 tablespoonÌý
- Salt - 1 teaspoon
Directions
- Bring water to a boil in medium saucepan. Add orzo. Cook 10 minutes; drain.
- While the pasta is still hot, in a large bowl combine the pasta and all the other ingredients and toss well to get the spinach to wilt down.
- Taste to see if there should be more lemon, feta or salt.
